Description

WINEMAKING PROCESS The grapes are harvested at the beginning of October and after careful manual selection, they are softly pressed and placed to ferment in horizontal macerators at controlled temperature for 15 -20 days. The mashing of the grapes includes pounding down and the repassing them for a careful extraction of the noble components of the grapes.
AGEING Brief sharpening of the sediment with malolactic fermentation process, then stop 50% of the wine for 6 months in French and American barriques and the remaining part in stainless steel tanks for 18 months. After bottling, it is refined for another 4 months in bottle.
